Reminder – Paleo Challenge Kicks off Today! Tip – use Sunday to prep some meals for the week. I made 4 lunches with 4 chicken breasts, 1 eggplant and 1 zuchinni – grilled in some coconut oil, salt and pepper, super easy to make. Two of our late nights during the week Kristie and I order Paleo meals from the Chef for dinner and eat the leftovers for breakfast.
